MATHURA KI ALOO KI SABJI (A THIN POTATO CURRY OF MATHURA,A NORTHERN HOLY PLACE OF INDIA)





Mathura ke  aloo recipe is a thin spiced potatoe curry.It is a traditional recipe from the streets of Mathura,a small  town of North India. Mathura,also known as the birth place of Hindu God Lord Krishna.In Mathura, this aloo  or Potato Curry  is served  with kasta kachori or lentil stuffed Indian pastry and hot jalebis .These are the favourite breakfast of the people of Mathura.

INGREDIENTS 
Potato(medium )- 5 to 6 (Boiled, peeled,  cut into cubes and slightly mashed few potatoes...)
Green Chillies : 3-4 (finely chopped)
Cumin seeds/ jeera: 1/2 tsp
Ginger-1inch (finely chopped )
Coriander powder -1 tsp
Red chilli powder -1 tsp
Turmeric powder -1 / 2 tsp
Amchur or dry mango powder -1/2tsp
Garam masala powder - 1tsp
Asafoetida -1pinch
Coriander Leaves : 1/4cup  (finely chopped)
Water : 2 cups
Oil : 1 tsp
Salt  to Taste



METHOD 
Heat oil in a deep bottomed pan..add chopped ginger..cook until  ginger become light brown..do it on medium heat.

Add jeers or cumin seeds and asafoetida...when jeera starts spluttering add chopped green chillies..

Add potatoes

Add coriander powder,red chilli powder, turmeric powder,mix with potatoes. .sprinkle some water while stirring. ..cook for 2 minutes on medium flame.

Add 2 cups of water and cook till water starts boiling.

 Once water  starts boiling add garam masala and amchur powder or dry mango powder. Switch off the heat. 

Garnish  with  chopped coriander leaves.

In Mathura it is served with Khasta Kachori and Hot Jalebis. .but I did not get time to make Khasta Kachori..I made simple  poori and enjoyed it.
