Kolkata Street Style Chatpata Aloor Dum or Dum Aloo (A Spicy, Tangy Baby Potatoes Gravy From The Street Of Kolkata )

Jhal Jhal Choto Aloor Dum or Tangy Spicy Baby Potatoes  Dum or gravy is  one of the popular  street food  of Kolkata.Today I al going to share how to make Kolkata Street Style Dry Aloor Dum or Dum Aloo.

INGREDIENTS 

Small baby potatoes-500 grams (boiled and peeled  Onion-1 (big) or 2 (medium) grated
Ginger Paste-1 tablespoon 
Garlic Paste -2 tablespoons
Cumin Powder - 1 teaspoon
Coriander Powder - 1 teaspoon
Red Chilly Powder- 1 teaspoon
Turmeric Powder - 1 / 2 teaspoon
Garam Masala Powder -1/2 teaspoon
Amchur or Dry Mango Powder - 1 / 2 teaspoon
Solid tamarind  paste, with pulp extracted after soaking in hot water-1 tablespoon
Oil-1/4 Cup ( Preferably Mustard Oil )
Salt to taste
Sugar-1/2 teaspoon(optional )

For Tempering or Tadka Spices
Cumin seeds-1/2 teaspoon 
Bay leaf -2

For Garnishing
Cumin seeds -1 teaspoon
Dry Red Chilli - 2  (dry roast both and grind to make a fine powder )
Chopped Coriander leaves -1/2cup

METHOD 

Heat oil in a pan...temper the oil with  cumin seeds and the bay leaves. Let  the cumin seeds sputter.

Add grated onion and fry until golden brown  .

Add ginger,garlic paste and cook for few seconds

Add  cumin,coriander, turmeric, red chilly powder,.. and amchur or dry mango powder...mix properly and cook until the oil gets separated .

 Add the baby potatoes,mix with masala..
add  tamarind pulp,sugar and salt.  Cook for a 2 minutes  on low flame..continuously  stirring  is required. 

 Now add 1/4 cup water ..bring it to boil..when the water  will start boiling..simmer the gas and cook until the water is absorbed by potatoes . It should  be a dry gravy...add garam masala powder. .mix well  and cook for 1 minute. Switch off the heat. Transfer into the serving bowl. 

Sprinkle  chopped coriander leaves and roasted cumin seeds and red chilli powder on top...mix.

Serve  hot  with  toothpick.It is  easy to eat this dry aloor dum or potato  curry  with toothpick.
