'Nolen Gur' or Khejurer gur or Date Palm Jeggery is a Bengal delicacy which is mostly available in winter season.In Bengal,it is called 'Nolen Gur'means New Jeggery . In winter season it is made from boiling the sap of date palm. It is used to infuse flavour and taste to many Bengali desserts like Rasgolla, Gur Sandesh ,payesh or kheer and many more.
One of my facebook freind posted Nolen Gur r icecream or jeggery icecream made by a renowned dairy farm of West Bengal few days back. After seeing this post I could not be able to keep myself away from making this delicious dessert Nolen Gur or Khejurer Gur r Ice cream.

Ingredients
Milk-1 cup+1/4 cup
Corn flour-2 tablespoons
Milk Powder-2 tablespoons
Cream-1cup (I used Amul Cream)
Date Palm Jeggery-3/4 cup+ 2 tablespoons for drizzling )
(If you do not have Date Palm Jeggery,then you can use any gur or jeggery,in that case just make small bites of that gur or jeggery and melt it with little water on stove on low flame until 1 or 2 minutes. )
Method
Add 1 cup milk in a pan and bring it to boil on medium heat.
Mix 2 tablespoons cornflour in 1/4 Cup of cold Milk.Mix with fork properly.
When milk will start boiling, add milk cornflour mixture and milk powder to the boiling milk gradually and stir continuously so that no lumps are formed. Simmer the gas and cook it on low flame until milk is thickened. Allow the mixture to cool.
When the milk is cool ,add 3/4 th cup of Nolen Gur or jeggery to the thickened milk and stir constantly with whisk for around 3-4 minutes.
Now take a large vessel half filled with Ice cold water. Place the bowl of thickened milk on it and add cream and mix . Pour this mixture into a bowl (preferably glass or plastic) and cover tightly with cling wrap and freeze.
Take the mixture out after 2 hours and beat it with a spatula or fork till as much as water crystals are broken. Cover with cling wrap and refrigerate again.Repeat this step for 4 times after every 2 hours. Then Freeze the ice cream until set.
Scoop and serve with drizzled Nolen Gur.
