DHABA STYLE YELLOW DAL
This yellow dal is very popular dish of us while eating out at a roadside Dhaba. ..It is a cooked lentils with different indian spices...laslty are tempered with oil or ghee and spices....It can be made with using any yellow dal..like chana dal, toor dal, masoor dal and moong dal..or you can make this dal mixed 2 or 3 dals together. ..here I used chana dal, red masoor dal, moong dal and arhar dal
INGREDIENTS for 3 People
FOR DAL
- Red Masoor Dal-4tbsp
- Yellow Moong Dal -3 tbsp
- Chana Dal - 2tbsp
- Arhar or toor Dal-2tbsp
- Onion Chopped-1
- Tomato chopped-1
- Green chilli chopped-2
- Coriander powder - 1tsp
- Red chilly powder -1tsp
- Turmeric powder - 1tsp
- Garam masala powder -1tsp
- Salt to taste
- Kasuri Methi -1tsp
- Water-2cups
For Tempering
- Ghee-1tbsp
- Oil-1tbsp
- Cumin seeds -1 tsp
- Chopped Garlic cloves-6
- Dry Red Chilli-2
- Hing or Asafoetida-1pinch
For smoke effect
I piece charkol or half onion
1tsp ghee

- Soak all dals in water for 20 minutes. .wash them properly
- Add them in pressure cooker with chopped onions, tomatoes, green chillies
- Add turmeric, and coriander powder
- Add salt to taste
- Add kasuri methi
- Add 2 cups water
- Pressure cook this dal fot about 5-6 whistles or more to get a medium consistency
- Mash the dal with a ladle...keep aside....add little bit water if it become more thick
- To give a smoky smell like dhaba...you can place a charcoal halved cut onion on the gas stove until it will get burnt...add some ghee or oil in a stainless steel bowl...then put this charcoal or onion in this bowl ....put this bowl on the mixture of dal...it is an optional step...cover the cooker for 3-4 minutes. ..to get the smoky smell.... remove the bowl from dal....you want you can avoid this step
- Now for tempering, Heat oil and ghee in a pan
- Add dry red chilli, Asafoetida, cumin seeds...let them crackle
- Add chopped garlic. ...let the garlic brown...
- Add red chill powder...stir on low flame...turn off the gas
- Pour the tempering into the dal
- Add chopped coriander leaves
Serve hot with rice or roti...i love to have this dal with jeera rice.
