Kulfi is a popular frozen dairy dessert of India and some other countries like Pakistan, Banglades.
Matka Kulfi is traditionally prepared by evaporating sweetened and flavoured milk via slow cooking, with continuous stirring to keep milk from sticking to the bottom of the vessel..until it's volume is reduced to one third. Then the semi-condensed milk is frozen in a matka or an earthen pot .
INGREDIENTS
Milk-1ltr
Sugar-1/2cup
Almonds soaked and peeled-10
Pistachios soaked and peeled-10
Cashew nuts soaked-5-6
Saffron soaked in 1tsp of warm milk-1pinch
cardamom powder-1/2tsp
Ghee clarified butter -1/2tsp
METHOD
Chop all the dry fruits.
Heat ghee or clarified butter in a pan..add all chopped dry fruits..and fry until light brown.
Heat milk in a saucepan and bring it to boil..when milk will start boiling. .reduce the heat.
Add dry fruits into the milk...and keep the heat on low.
Stir continuously to keep milk from sticking to the bottom of the vessel..until it's volume is reduced to one third.
Add sugar and stir till it dissolves. and add saffron to the reduced milk.
Add green cardamom powder and mix.
Pour the above mixture into four small matkas or earthen pot .. cover with any clean cloth or foil..and freeze it for four to five hours.
After that take out from fridge and enjoy.
