SAHI TUKDA (INDIAN STYLE SWEET MADE WITH BREAD )




Today is Rakshabandhan...or Rakhi Purnima... Raksha Bandhan is a Hindu festivalthat celebrates the love and duty between brothers and sisters.We can not think this day without sweets...so to celebrate  this day I made Sahi Tukda.

"Sahi Tukda" is a royal  treat  to taste buds at any time...here Sahi means "Royal" and Tukda means " A Piece" .You will  get the Royal Taste while  having a bite of Sahi Tukda...To make  Sahi Tukda  you need to have RABDI or thickened  milk,Sugar syrup  or,Frying bread...here I am going to share  step  by step recipe  of "Sahi Tukda ".

INGREDIENTS OF RABDI
Milk-1 
Sugar -1/4cup..can add more if required
Cardamom powder-1/4 tsp
A pinch of saffron soaked  in 1tsp warm milk
Rose water -1tsp or a drop  of rose essencea

INGREDIENTS OF SUGAR SYRUP 

 sugar-1cup
 water-1/2cup
 Cardamoms powdered-1/2tsp


INGREDIENTS OF FRYING BREAD

6 slices of white bread
Ghee or clarified butter -1/4cup

INGREDIENTS FOR GARNISHING 

 Almonds(soaked and peeled)-10 cut into thin sliced 
Cashew nuts -5 (sliced )
Pistachios  or Pesta-5(sliced)



METHOD OF MAKING RABDI 
Heat milk in a saucepan and bring it to boil..when  milk will start boiling. .reduce the heat.

Stir continuously to keep milk from sticking to the bottom of the vessel..

Add sugar and stir till it dissolves. and add saffron soaked  milk..add cardamom  powder.

Cook until  it's volume is reduced to one fourth.

Let it be cool...when it is cooled..add rose water.

METHOD OF MAKING SUGAR SYRUP 
Add sugar,water and cardamom powder  to a pan and bring to a boil. Turn the heat down until it is just bubbling. Cook the syrup until  single string form .Watch the syrup carefully to make sure it doesn't burn.

The sugar syrup should reach  the  single thread stage..it means,  dip a spoon into sugar syrup,lift it out. Wait a moment and carefully pick up a drop of syrup on your finger. Then touch your finger to your thumb and pull them apart slowly to see how many strings of syrup form. For this recipe, you want a single string syrup.If no thread forms, or it breaks quickly, your syrup is not yet cooked enough.If multiple strings forms,  then it has been overcooked...and need to add some additional water or begin again. When your sugar syrup  is ready,remove  from heat.

METHOD OF FRYING BREAD SLICES 
Cut the edges of the bread  slice. .and then cut each bread slice  diagonally.

Heat Ghee in a frying pan..add bread slices...and fry on medium flame until golden brown. .. when one side is browned, flip and toast the other side..and fry until  golden brown. .remove the bread slices  on paper towel.

ASSEMBLING THE SAHI TUKDA

Dip the fried bread slices into the sugar syrup.
Arrange the  bread slices onto  the plate
Pour the thickened milk onto it.
 Add 1tso ghee in a pan..Roast the chopped dry fruits.
Sprinkle chopped dry fruits. .and few stands of served.



It taste good when it is chilled..so before
assembling  the Sahi Tukda..keep the thickened milk in fridge  for  few hours.
