BOONDI LADDU (INDIAN SWEET ) JANMSHTAMI SPECIAL



Tomorrow is Janmastami.Janmashtami  also known as Krishnashtami, Gokulashtami  and many more.Janmashtami, is an annual celebration of the birth of the Hindu god  Krishna.


To celebrate this Holy day,I made Boondi laddu.We Indian  can not think  any  festival  without Laddu.


Boondi  Laddu is a very famous Indian dessert  usually  made  during festival times.The word  Boondi came  from the Hindi word 'Boond', mean 'water droplet'.Boondi is so named because it looks like drop. They are  made  out of besan  batter, poured through a ladle ,fried in oil and soaked in sugar syrup with a blend of nuts.
Many of us think that making boondi laddo at home  is very difficult ,but I just  want to assure you..it is very simple to prepare though  it is time consuming procedures.But if we want  to have the fresh  aromatic  boondi Laddu then we can spent  some extra  time  from our daily schedule to  make boondi laddu .



To make we will  have to make two things,boondi and sugar syrup.

First we will learn how to make sugar syrup.

INGREDIENTS OF MAKING SUGAR SYRUP 

Sugar-2cups

Water-1 1/4 cups or 1. 25  cups

Cardamom Powder



METHOD OF MAKING SUGAR SYRUP 

Take sugar in a pan and add  water into it.Keep this solution o low heat.Let the sugar melt completely. After the sugar gets dissolved, cook till you will get one  thread consistency.

One thread consistency  means the sugar syrup should reach  the  single thread stage..it means,  dip a spoon into sugar syrup,lift it out. Wait a moment and carefully pick up a drop of syrup on your finger. Then touch your finger to your thumb and pull them apart slowly to see how many strings of syrup form. For this recipe, you want a single string syrup.If no thread forms, or it breaks quickly, your syrup is not yet cooked enough.If multiple strings forms,  then it has been overcooked...and need to add some additional water or begin again. When your sugar syrup  is ready,remove  from heat.




The sugar syrup should be hot when you add boondis,so you have to fry the boondis  and prepare  the sugar syrup side by side...if boondis are not hot..then it will be difficult  to bind boondis.

Now we will learn how to make boondis.

INGREDIENTS OF MAKING BOONDI 

Gramflour/Besan : 1 cup

Water-1/2cup+2tbsp (the amount of water depends  on the amount  of besan,you have to mix besan and water according  to this ratio )

Crushed Saffron -1pinch

Black Cardamom seeds-1/2tsp

Pistachios : 1Tbsp(chopped )

Cashew nuts : 1Tbsp (chopped )

Oil-1cup (for frying)

Orange or Yellow  Food Colour -1pinch  (optional )

Ghee or Clarified Butter -2tbsp(it will help to bind boondis  to make a shape of laddu)

METHOD OF MAKING BOONDI 

Take gramflour,saffron and food colour  in a bowl..add little water  to make a smooth batter  until all lumps are dissolved.The consistency  of batter is very important.

If batter is thick then boondi will become long; if batter is thin then boondi will become flat.


Heat oil in a pan. Whisk the chickpea flour mixture for one more time nicely.

Mix the wired whisk into the besan mixture and then  place it above the hot oil.And then tap the wired whisk which onto the hot oil .Do this process again and again.

Do not keep too much on a height ,as the batter droplets,when falling from a height, do not give round shape.

Don’t overcook it otherwise it will be crispy but not soft.And if boondis are not  soft they wont be able to  absorb   the sugar syrup.



Strain them with a slotted  spoon ..and keep on a plate.



METHOD OF MAKING BOONDI LADDU

Add fried boondis   directly to the hot sugar syrup. Fry all boondis like the above  mentioned  way and add to the hot sugar syrup.




Add  ghee,black cardamom seeds, pistachios and cashew nuts in the sugar syrup and mix all ingredients  in syrup for 5-10 minutes, so that the boondi absorbs the syrup properly.





Wet your hands with some ghee and take 2-3 tbsp mixture on hand and shape the laddu.

Keep the laddus open in the air fo 2-3 hours to get dry.

Your delicious Boondi Laddus are ready!


NOTES

You may add Melon seeds also. Dry roast the melon seeds (1Tbsp) and add in the sugar syrup.

Many people use  ladle  with small holes or tea strainer  to make boondis...I also used for my first batch of boondis..but these were  little  bit  big..so I shifted to wired  whisk  to make boobdi...not I got small tiny boondis  as my requirement.
If you use laddle with small holes  or tea strainer then place the ladle 6-7 inch above the pan and pour  flour batter on top of it with the help of a spoon. Mixture will fall in the pan in the form of small drops and boondi will get ready.
