CHEESY BUTTER RICE CROQUETTE





My daughter  does not love to see any
 rice preparation  in her snack box..as it takes quite a long time to be finished and she does not go to the ground and play with her class mates. But  she loves to have s butter rice when  she is at home.So Just to make her happy ,made this  Rice Croquette. In this way,she  have  the taste of her favourite butter rice and also get a chance  to play.

INGREDIENTS OF INNER FILLINGS 
Cooked Rice(Preferably  leftover or cooked atleast  3 to 4 hours before )-1cup
Butter-1tbsp
Salt to taste
Boiled  Mashed Potatoes -2
Grated Cheese  (Preferrably Mozzarella )-1/2 cup


INGREDIENTS OF OUTER PART
Maida or Flour-1cup
Water-1/2cup (if require,you can add more...just make sure  the batter should not be very thin or thick )
Salt to taste
Crushed Cornflakes -1 cup

INGREDIENTS OF FRYING 

Oil-1/2cup
Salt 1 pinch


METHOD

Take a bowl,add rice,butter,salt,mashed potatoes ,1/4 cup grated cheese and knead to form  like a soft dough.


Take some portion and make flat round from the mixture...make a hole in the center,add some grated cheese  from remaining  cheese,and then make to give  a shape of round patties.

Take a bowl,add maida  or flour,salt and water..mix well to  make a batter...then dip all rice patties  into batter...coat with crushed  cornflakes . . keep them on a plate..and put it in the fridge  for 10 minutes


Heat oil in kadai or wok..add pinch of salt..(when you deep fry something. .add pinch of salt in oil....it absorb lees oil)

Add 4 to 5 coated butter rice croquette (according to the size of your kadai ) in oil...and deep fry on medium flame until golden brown colour...Take them out from kadai or wok ...and place them on kitchen Paper. And put it in your kids snack box.I can assure you ,kids will love it.

    1. Thanks dear..I would have to make 2 tiffin boxes for my daughter by 6.20 in the morning,do not have any option except this.
