Mawa or Khoa Cup Cake (Mumbai's Irani Cafe special Mewa Cup Cake) Cup Cake made using evaporated milk




Mawa cakes are a very popular item sold in Iranian cafes or  bakeries in Mumbai and Pune.These mawa cakes are soft and buttery infused with cardamom flavour.

Mawa (also known as Khoya/ Khoa) is a evaporated milk, made by slowly reducing  full fat milk until all that remain is a mass of slightly milk solids.
You  would love to have  a mawa cupcake with a hot cup of tea or coffee.

You can either you make them home or purchase from store. Here I made mawa at home.
Making mewa or khoya at home is very easy  but it is little  bit time consuming. 

For getting  fresh homeade mawa one can give that much  time😊😊😊.

First we will learn  how to make mewa at home

Ingredients of making  Mewa 

1 litre full-cream milk.


Method of making Mewa

Heal milk in a heavy bottomed pan on high flame,when the milk will start boiling,simmer the gas and keep boiling it on low flame till it reduces to ¼ the volume or the milk solids become lumpy.

Using spatula, scrape the milk solids from the sides and add these to the bowl. Switch off the gas and cover the bowl .Let the mewa cool at room temperature,then you can refrigerate it. You can prepare the Mewa a day before of making Mewa Cup Cake.

Recipe  of making  Mewa Cup Cake using  Homemade Mewa.

Ingredients  of making  Mewa Cup Cake

All purpose flour or maida -1 1/4  cup
Butter-1/4 cup or 1/2  block of 100 grams butter
Milk-1/2 cup (room temperature )
Mewa  or khoya- 100 grams
Castor or granualed sugar-1 cup
Eggs-2(you can use 1/2cup beaten yoghurt  instead of eggs)
Baking  Powder-1teaspoon
Cardamom pod-4 (grounded) or cardamom powder-1/2 teaspoon
Cashew nuts-1/2 cup+1/2 cup (broken)



Method of making  Mewa Cup Cake

Preheat oven to 350 degree  F or 180 degree C.

Line 12 small muffin or cupcake or 6 big moulds with paper liners or if you do not have paper liners then just grease the cupcake moulds  with little  bit butter

In a bowl,add all purpose flour, baking powder, 1/2 portion broken cashews and grounded cardamom or cardamom powder ,mix them well.

Take another big bowl, add mewa or khoya and mash it with hands or back of spatula properly, then add eggs or beaten yoghurt, and sugar and mix them very well until become a creamy texture.

Addmilk and butter in a small saucepan.

Heat this mixture on low flame until the butter  has melted (make sure do not boil the milk butter mixture,just heat ).Add vanilla  essence  and mix.Mix well.


Gradually add this milk butter mixture to the egg sugar mixture.Fold with spatula slowly until just combined. Do not over mix.


Pour the batter into the flour mixture slowly, and just fold with a spatula very well until the dry and wet ingredients are well combined.

Divide the batter among the prepared cups topping with broken cashew nuts (they will be filled  upto 3/4th portion of the cupcake mould,as the cakes will rise )

Bake the cupcakes for 25 to 30 minutes or  until a toothpick inserted into the centre comes out clean.

Transfer to a wire rack and let cool completely.

Tips
___________

If you bake in OTG,then always  make sure both the rods are on.

Place the cake pan in the middle rack.

If you bake in microwave,always bake at CONVECTION mode and use the lower grilling rack for baking.

Do not increase or decrease the temperature during baking.

Once baking is complete,then remove the pan from the oven as soon as possible.

Do not open the door of the oven while baking,otherwise moisture will get into the oven and it will harm your cake.

    1. Hi dear,electric beater or whish anything you can use..even if you not have both ,can beat with fork.After adding flour mixture to the wet mixture,do noy beat,just fold or mix with spatula very slowly,then you will get fluffy and spongy cake and cake would not be flat on top

    One more thing was wen i mixed wet ingredients they curdle. Is it becos of yoghurt.
    Pls help me. I loved taste of ur mawa cake. Js help me in this matter.

It may happen that it is eggless,eggs help to rise cake,but if the texture is fluffy and soft that means your cake is perfect..a perfect cake means soft,fluffy and no cracks on top.If you mix wet ingredients with hand whisk then do one thing before adding mawa to wet ingredients, grind it in a mixer then mix...then follow the steps. .then it would not be curdled and if is is curdled little bit,its because of mawa..it will not make any difference. ..
