Christmas Special Fruit Cake

Fruit cake is a rich dense cake loaded with  candied fruit ,dry fruits , nuts and  spices,and  usually made during Christmas. Basting fruitcake with rum,brandy or wine also provides moisture and helps preserve the cake. You add the above mentioned  liquor  to fruitcake both before baking through soaking the fruits and after baking by applying directly to the cake (source-wiki how).But 
 what about those who did not soak dry fruits  into any liquor.  For them  I am presenting   this fruit cake, here I used Rum and caramel syrup.If you want to avoid rum,then you can use orange juice.

Tutti Frutti- 1/4 cup
Cashew nuts(chopped )  - 2 tbsp 
Walnuts (chopped ) -2 tbsp
Dried Dates -2 tbsp (Soaked and chopped)
Almonds - 2 tbsp (soaked ,peeled and chopped) 
Almonds -1/4cup (soaked, peeled and sliced)
Golden Raisins - 2 tbsp
Black Current-1/4 cup
Glazed cherries -2 tablespoons +1/4cup (chopped )
Ground Nutmeg-1/4tsp
Ground Cinnamon - 1/4tsp
All Purpose Flour - 1 Cup+tablespoons
Butter /vegetable oil- 1/2 Cup(softened, not melted)
Granulated  sugar -3/4 Cup
Rum-1/4 cup(if you want to avoid rum,you can use orange  juice in sane quantity )
Caramel syrup-1/4cup
Baking Powder - 1.5 tsp
Baking Soda -1 pinch 

You  can replace the Dried Fruits and Nuts as per your preference.


Preheat the oven to 180 degree C for 10 minutes

Take a big mixing bowl,add eggs and sugar,whisk it properly with hand beater  or electric  beater.

Add rum,butter or oil and caramel syrup into the egg mixture. Mix them properly until you will get a smooth consistency

Sieve flour, baking powder,nutmeg powder and cinnamon  powder in a bowl,mix them properly.

Add all the dry fruits into the flour mixture,fold them properly as all dried fruits gets coated properly with flour.

Add flour mixture into the liquid mixture gradually,and fold them with a spatula.Do not mix so fast,slowly  fold the flour mixture with liquid mixture until you will get a smooth batter  without lumps

Lining the 9"inch cake pan with grease proof paper Now Grease the paper with  butter. Pour the  cake batter into the cake pan and fill the pans about 2/3 full. After putting mixture in the pan and smoothing the surface, hold the pan with two hands and  drop the tin three times to remove air bubbles.

Garnish the top surface  of cake with sliced almonds and cherries.

Bake for 40 minutes  until a toothpick inserted comes out clean. Baking  times are vary  because we all use different oven,so keep checking.

Remove from oven,let it be cool. Turn the cake onto a plate,slice them and enjoy.

How to make caramel syrup


Sugar-4 teaspoons
Water -2 teaspoons + 1/4 cup ( warm)


Take a bowl,add 4 teaspoon of sugar and 2 teaspoon of water and mix.
Heat it on high flame until it starts bubbling.
Reduce the heat till it changes  colour.
Switch  off the gas and pour 1/4cup warm water,mix properly .
Let it be cool and then use it,So it it better your caramel  syrup before.
