Nowdays Chinese food plays a very important role to Indian culinary scene. I have not tasted any authentic Chinese food till now so I do not have any experience about that.But I love Indo - Chinese dishes which are easily available in any Indian Chinese restaurant or multi -cuisine restaurant.
Sweet and sour chicken is one among them.You will get different variations of sweet and sour chicken recipes.Here I had added pineapple chunks , sweet chili to sauce and vinegar to make this dish,and it tasted so yummy.Do not need to believe me, just try this recipe and see the result.

Ingredients

- Chicken Breasts-250 grams (boneless)(cut into cubes)
- Red Bell Pepper (Red Capsicum)-1 (cut into slices)
- Pineapple (fresh or frozen)-1 cup (cut into small chunks)
- Garlic-5 pods (chopped )
- Sweet Chilli Sauce-1/4 cup
- Vinegar-1teaspoon
- White Pepper (or black pepper)-1 teaspoon
- Spring onions-1/4cup (green portions)
- Salt to taste
- Flour-1.5 cups
- Eggs-2
- Cornflour-2teaspoon mix with 1/4cup of water)
- Vegetable oil -2cups (for frying ) + 2 teaspoon
Method
~~~~~~~
- Crack the eggs in a bowl and beat properly with little bit salt
- Take flour in a wide plate and mix with little salt
- Coat the chicken pieces with flour then dip into the eegg mixture
- Coat the chicken pieces again with flour
- Heat 2 cups oil in a heavy bottomed deep wok
- Fry the chicken pieces into batches until golden brown
- Remove the chicken pieces from wok and keep them aside
- Heat 2 teaspoons Oil in another pan
- Add chopped garlic , fry until light brown
- Add chopped red Capsicum and sauté for 2 minutes
- Add chopped pineapple, mix and stir
- Add salt and pepper
- Add sweet chilli sauce and mix
- Add fried chicken pieces and toss with everything
- Add cornflour mix with water
- Add 1 teaspoon vinegar, mix and cook for 2 minutes
- Switch off the heat and add chopped spring onions.
- Serve hot with plain rice or any flavored Chinese rice
Tips
~~~~~
Always make any Indo Chinese dish on high flame , so the dish doesn't get burnt from the bottom, keep stirring the dish.
