ADRAKI GOBI...GINGER FLAVOURED CAULIFLOWER.....ADAI PHOOLKOPI
Adraki Gobi is a delicious vegetable recipe with a lovely ginger flavour.It is cooked with ginger and some other spices...many use onion and garlic in this recipe...but I did not use onion and garlic just to get aromatic flavour of ginger.It is best enjoyed with roti, paratha or pulao .
INGREDIENTS
- Cauliflower-1 (cut into medium florets)
- Potatoes-1 (cut into cubes)
- Cumin seeds -1 tsp
- Ginger paste -2tsp
- Turmeric powder -1tsp
- Red chilly powder -1tsp
- Coriander powder - 1tsp
- Cumin Powder -1tsp
- Salt to taste
- Sugar -1pinch
- Tomatoes-1 (chopped )
- Garam masala powder -1tsp(dry roast 2 green cardamom and 1' chinamon stick. .then grind to a make a fine powder)
- Oil-1/4 cup
- Coriander leaves-1/4 cup
- Ginger Jullenie-2tsp
METHOD
- Mix Cauliflower Florets with salt and turmeric powder
- Heat oil in a pan. .add cauliflower florets. ..fry them until light brown. ..keep aside
- Add potato cubes. ..fry them until golden brown. ..keep them aside
- Add cumin seeds. ..let them crackle
- Add ginger paste...mix and stir
- Add tomato psste...sauté it very well
- Add fried potatoes and gobi...saute for 2-3 minutes
- Add turmeric powder, red chilly powder, coriander powder, cumin powder, salt and sugar...mix....cook for 2 minutes. .
- Add 1/2cup water, bring it to boil, when the water starts boiling. ..cover. ..and cook on medium flame till vegetables are done.
- Garnish with coriander leaves and ginger jullenie
