Sooji or Rawa Kheer or Semolina porridge


       
   
SOOJI KHEER OR SEMOLINA PORRIDGE
You are getting bored to the usual rice kheer and semiya or vermicelli kheer....then you can try this healthy sooji kheer or semolina porridge.It is a an easy recipe and can be prepared in less time.It is also simple and healthy recipe for a more than 6 months old baby who is being introduced new food as sooji is light and easy to digest.

INGREDIENTS

Semolina (Rawa or Sooji)-1/2 cup
  • Milk-2cup
  • Sugar-1/2cup 
  • Bayleaf-1
  • Green Cardamom-2
  • Saffron strands-6/7
  • Ghee-1tbsp
  • Cashew nuts-1/4 cup
  • Raisin-1/4 cup(Soak in water)
  • Chopped Almonds-2tbsp
  • Milk Powder-2tsp


METHOD
  • Heat a pan and dry roast cashew nuts..keep them aside
  • Heat ghee in a pan..add bay leaf..and green cardamom...add rawa or sooji...roast until light brown 
  • Soak saffron in 2tbsp milk
  • Add milk in a thick bottomed non stick pan. .bring it to boil and simmer on medium heat till it is reduced to half
  • Add saffron milk
  • Add roasted rawa or sooji in reduced milk. .stirring continuously to prevent lumps
  • Add sugar..mix. .add roasted cashew nuts..stirring continuously. .cook on medium flame for 2 minutes
  • Add milk powder. .mix and cook for 2 minutes
  • Switch off the gas
  • Take out the Raisin from bowl..squeeze the water and add to the kheer....Raisin has a lillte bit soury taste...if you add raw Raisin in kheer. .the kheer can be curdled
  • Garnish with chopped almonds, few saffron strands 
Note

If you make sooji kheer for baby...then just use milk, sugar and rawa or sooji.Then just roast rawa or sooji. .boil milk..add sooji and sugar...cook for 5 minutes...it become very watery....as can eat it with their 1 or 2 teeth😊😊😊😊😊
