Breakfast Muffin (Made with whole wheat and banana,)



Breakfast is the first meal of a day.Breakfast food items vary widely from place to place, but mainly it  includes a carbohydrate-rich food such as grains or cereals,vitamin based food such as fruit, vegetables and a protein-rich food such as milk,eggs, meat or fish.


Bread,egg,milk,fruit like banana ,cereal are common examples of breakfast items through out the World.

What if we can mix flour,egg,milk,banana,oats together in a  bowl, and then put the batter into the muffin pans and bake,we will get a fluffy,spongy muffin called Breakfast Muffin.

As it is the first meal of the day,it should be healthy.To make it more healthier, I used whole wheat flour ,honey and banana instead of all purpose flour /maida  and sugar.

These whole wheat, honey,banana made muffins are so fluffy and moist and they are also healthy compared to other muffins.

INGREDIENTS

Ripe or over ripe bananas-2(Medium)
Whole wheat flour/ atta-1 cup
Baking powder-3/4 teaspoon
Baking soda-1pinch
Honey-1/4cup(add more if you want little sweet muffin)
Vegetable oil-1/4cup
Egg-1
Milk-1/2 cup(if you want to skip egg,add 1/4cup more milk)
Vanilla essence-1 teaspoon
Oats-1/4cup(for sprinkle on the top)

INSTRUCTIONS

Preheat oven at 180 degrees C or 350 degrees F. (If using a regular oven,  make sure both the top and bottom rods are on and  for a microwave convection oven, just preheat the oven).
Peel and chop the bananas. add them to a bowl and mash them with a fork. you can also use a blender to mash the bananas.
Add honey, oil ,egg ,milk and vanilla essence,beat them very well so that the all ingredients are combined well.
Add flour, baking soda, baking powder through sieve(Channi)  in the same bowl.
Fold with spatula until a creamy texture are formed.

Grease 8  muffin cups with butter or oil (if you use silicon mold then do not need to require any greasing )

Divide the batter evenly between the 8 muffin cups, filling each cup about two-thirds full. Sprinkle the tops of the muffins with a small amount of oats (about 1 tablespoon)

Put the cupcakes mould on baking tray and keep the tray in centre wrack.

Bake muffins for 23 to 25 minutes, or until a toothpick inserted into a muffin comes out clean. Remove the muffins from oven.Let the muffins come to room temperature. You might need to run a butter knife along the outer edge of the muffins to loosen them from the pan.

Enjoy muffins with a glass of hot milk or anything else you want.
